Lumberbeard Brewing — October 6th — Our final fresh hop beer of the season is available today on tap and in cans. Mosaic is Fresh! Each sip is full of juicy blueberries and ripe peaches with notes of hibiscus tea on the finish.
We got our organic Cascade hops from Roy Farm hops and brewed with them less than 12 hours after harvest. These hops were seriously sticky going into the whirlpool.
Aromas of sage, apricot, vanilla, and cedar pleasantly welcome you into this beer. Very heady brew. Pour slowly. Great floral hop nose. Nutty grapefruit with a light bitter finish. The use of seasonal hops for this beer from this great brewer ensure a fresh easy drinking beer with lovely citrus flavours.
A great beer to introduce non beer drinkers to the wonderful world of craft beer. The green hops on the label tells the story. Very fresh, green, sharp hoppy flavour. Quiet bitter. That saves a lot of money on shipping costs, since the short fresh hop shelf life requires expedited shipping.

I chose to keep with tradition this year and use the same hops as previous years because they turned out so well. Q: Is there a standard process for using fresh hops, or is there room for experimentation? Fresh hops can be used in several different parts of the brewing and aging processes, so there is room to play around. Some common uses are adding fresh hops to the whirlpool after boiling, dry hopping with them, or transferring a beer into a tank filled with fresh hops.
